Here’s a comforting recipe for Hearty Pre-Paycheck Stew—perfect for using up ingredients you have on hand!

Hearty Pre-Paycheck Stew

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2-3 carrots, sliced
  • 2-3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 lb (450g) potatoes, diced (any kind)
  • 1 can (14 oz) diced tomatoes (with juices)
  • 4 cups broth (vegetable or chicken)
  • 1 can (15 oz) beans (like kidney or chickpeas), drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups frozen mixed vegetables (or whatever you have on hand)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Sauté the Base:
    • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  2. Add Garlic and Potatoes:
    • Stir in the minced garlic and cook for another minute. Then add the diced potatoes.
  3. Combine Ingredients:
    • Pour in the diced tomatoes and broth. Add the beans, thyme, paprika, oregano, salt, and pepper. Bring to a boil.
  4. Simmer:
    • Reduce the heat and let it simmer for about 20-30 minutes, or until the potatoes are tender. If you’re using frozen mixed vegetables, add them in the last 10 minutes of cooking.
  5. Adjust Seasoning:
    • Taste and adjust seasoning as needed.
  6. Serve:
    • Ladle the stew into bowls and garnish with fresh parsley if desired.
