Here’s a simple recipe for Potatoes with Meatballs and Cheese, combining savory meatballs, creamy potatoes, and melty cheese in one dish!

Potatoes with Meatballs and Cheese

Ingredients:

  • 4 large potatoes (peeled and cut into chunks)
  • 1 lb ground beef (or any ground meat you prefer)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce (or your favorite pasta sauce)
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons olive oil (for cooking)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the potato chunks and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.
  2. Make the Meatballs: In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix until well combined, then form into small meatballs (about 1 inch in diameter).
  3. Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides (about 6-8 minutes). Once browned, remove from the skillet and set aside.
  4. Assemble the Dish: Preheat your oven to 375°F (190°C). In a large baking dish, layer the cooked potatoes. Place the cooked meatballs on top of the potatoes. Pour marinara sauce evenly over the meatballs and potatoes.
  5. Add Cheese: Sprinkle shredded mozzarella cheese over the meatballs and potatoes, ensuring it covers the entire dish.
  6. Bake: Place the dish in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh parsley, if desired. Serve hot!
