Frozen Fruit Salad is a refreshing and easy-to-make dessert that’s perfect for summer gatherings or any time you want a sweet, chilled treat. This creamy salad combines a variety of fresh or frozen fruits with a creamy base, then freezes to a cool, scoopable consistency. Here’s a simple recipe to make this delicious dessert:

Ingredients:

  • 1 can (8 oz) crushed pineapple, drained
  • 1 can (15 oz) fruit cocktail, drained (or use a mix of your favorite fruits like peaches, pears, and grapes)
  • 2 cups frozen mixed berries (or any fruits you like)
  • 2 bananas, sliced
  • 1 cup mini marshmallows
  • 1/2 cup sweetened shredded coconut (optional)
  • 1 cup heavy whipping cream
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

Instructions:

Step 1: Prepare the Fruit

  1. Drain the Canned Fruit:
    • Drain the crushed pineapple and fruit cocktail thoroughly to avoid excess liquid in your salad. If you’re using other fruits, such as fresh berries, cut them into bite-sized pieces.
  2. Slice the Bananas:
    • Slice the bananas into thin, bite-sized pieces.

Step 2: Make the Creamy Base

  1. Whip the Cream:
    • In a mixing bowl, whip the heavy cream with an electric mixer until it forms soft peaks (about 3-4 minutes).
  2. Add the Sweetened Condensed Milk:
    • In a separate bowl, combine the sweetened condensed milk and vanilla extract. Stir well until smooth.
  3. Fold the Cream:
    • Gently fold the whipped cream into the sweetened condensed milk mixture, being careful not to deflate the whipped cream.

Step 3: Mix the Fruit Salad

  1. Combine the Fruit and Cream:
    • In a large bowl, combine the drained pineapple, fruit cocktail, frozen berries, banana slices, mini marshmallows, and shredded coconut (if using).
  2. Stir in the Cream:
    • Gently fold the fruit mixture into the creamy base, ensuring the fruit is well coated with the creamy mixture.

Step 4: Freeze the Salad

  1. Transfer to a Baking Dish or Serving Dish:
    • Transfer the fruit salad mixture into a 9×13-inch baking dish or a similar-sized dish. Smooth the top evenly.
  2. Freeze:
    • Cover the dish with plastic wrap or aluminum foil, and freeze for at least 4 hours or until solid.
