Instructions
Carne Guisada
- Sear the Meat:
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes in batches and brown on all sides. Remove and set aside.
- Sauté Vegetables:
- In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until the onion is translucent.
- Combine Ingredients:
- Add the tomatoes, beef broth, tomato paste, chili powder, cumin, oregano, and the browned beef. Stir well to combine.
- Simmer:
- Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add more broth if needed. Season with salt and pepper to taste.
Flour Tortillas
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add Fat:
- Cut in the lard or shortening until the mixture resembles coarse crumbs.
- Add Water:
- Gradually add the warm water, mixing until a dough forms. Knead the dough on a floured surface for about 2-3 minutes until smooth.
- Rest the Dough:
- Cover the dough with a towel and let it rest for about 30 minutes.
- Roll Out Tortillas:
- Divide the dough into 10-12 equal pieces. Roll each piece into a ball, then flatten with a rolling pin into thin circles.
- Cook Tortillas:
- Heat a skillet or griddle over medium-high heat. Cook each tortilla for about 30-60 seconds on each side, or until lightly browned and cooked through. Keep warm in a towel.
