Here’s a delicious recipe for Cheesesteak Tortellini in Rich Provolone Sauce:

Ingredients

For the Tortellini:

  • 1 package (9 oz) cheese tortellini
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper (green or red), diced
  • 1 lb thinly sliced steak (ribeye or sirloin)
  • Salt and pepper to taste

For the Provolone Sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Tortellini:
    • Boil the tortellini according to package instructions. Drain and set aside.
  2. Sauté the Vegetables:
    • In a large skillet, heat olive oil over medium heat. Add the onion and bell pepper, cooking until softened, about 5 minutes.
  3. Cook the Steak:
    • Add the sliced steak to the skillet, season with salt and pepper, and cook until browned and cooked through. Remove from skillet and set aside.
  4. Make the Provolone Sauce:
    • In the same skillet, melt the butter. Whisk in the flour and cook for 1-2 minutes until lightly golden.
    • Gradually add the beef broth and heavy cream, whisking until smooth. Cook until the sauce thickens.
    • Stir in the provolone cheese, garlic powder, and onion powder until melted and creamy.
  5. Combine Everything:
    • Add the cooked tortellini and steak back to the skillet. Toss to coat everything in the sauce.
  6. Serve:
    • Garnish with chopped parsley and enjoy!
