Ingredients:

For the Buffalo Chicken:

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1/2 cup buffalo sauce (adjust to your spice preference)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

For the Lasagna:

  • 9-12 lasagna noodles (depending on your dish size)
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup sour cream (optional, for extra creaminess)
  • 1/4 cup chopped green onions (optional, for garnish)
  • 1 tbsp dried parsley
  • Salt and pepper to taste

For the Ranch Drizzle:

  • 1/2 cup ranch dressing
  • 1-2 tbsp buffalo sauce (to taste)
  • Fresh chopped parsley (optional for garnish)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2. Prepare the Buffalo Chicken:

  • In a medium pan, heat olive oil over medium heat. Add the shredded chicken, garlic powder, onion powder, salt, and pepper. Stir until the chicken is coated in the spices.
  • Pour in the buffalo sauce and stir to combine. Let it simmer for a few minutes until the chicken is well coated and heated through. Set aside.

3. Cook the Lasagna Noodles:

  • Cook the lasagna noodles according to package instructions. Drain and set aside. You can lightly toss the noodles with a bit of olive oil to prevent them from sticking together.

4. Make the Cheese Mixture:

  • In a large mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, cheddar cheese, Parmesan cheese, egg, sour cream (if using), parsley, salt, and pepper. Mix until well combined and creamy.

5. Assemble the Lasagna:

  • In a large baking dish (9×13 inches works great), spread a thin layer of buffalo chicken on the bottom of the dish.
  • Add a layer of lasagna noodles on top of the chicken.
  • Spread a generous amount of the cheese mixture over the noodles, followed by a layer of buffalo chicken.
  • Repeat the layers, ending with a final layer of cheese mixture on top (save a little mozzarella and cheddar cheese for the top layer).
  • Sprinkle the remaining mozzarella and cheddar cheese over the top.

6. Bake the Lasagna:

  • Cover the lasagna with aluminum foil and bake in the preheated oven for 25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden brown.

7. Prepare the Ranch Drizzle:

  • While the lasagna is baking, mix together the ranch dressing and buffalo sauce in a small bowl. Adjust the amount of buffalo sauce to your desired level of spice.

8. Serve:

  • Once the lasagna is done, let it cool for 10-15 minutes before slicing.
  • Drizzle the ranch and buffalo sauce mixture over the top of each slice before serving.
  • Garnish with chopped green onions and fresh parsley if desired.
