Here’s a tasty recipe for Cheesy Chicken Fritters that are easy to make and perfect as a snack or a meal!

Cheesy Chicken Fritters

Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup breadcrumbs (or panko)
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped (optional)
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Olive oil (for frying)

Instructions

1. Mix the Ingredients

  • In a large bowl, combine the cooked chicken, shredded cheese, breadcrumbs, green onions, parsley, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.

2. Form the Fritters

  • Use your hands to form the mixture into small patties, about 2-3 inches in diameter.

3. Heat the Oil

  • In a large skillet, heat a few tablespoons of olive oil over medium heat.

4. Cook the Fritters

  • Once the oil is hot, add the fritters to the skillet in batches (don’t overcrowd). Cook for about 3-4 minutes on each side, or until they are golden brown and cooked through.

5. Drain and Serve

  • Remove the fritters from the skillet and place them on paper towels to drain any excess oil.

Serve the cheesy chicken fritters warm, with your favorite dipping sauce like ranch, aioli, or salsa. They make a great appetizer, snack, or even a light meal!
