Here’s a classic recipe for comforting Chicken Noodle Soup that’s perfect for any day!

Chicken Noodle Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded (rotisserie chicken works well)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are tender.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Add Broth and Chicken:
    • Pour in the chicken broth and bring to a boil.
    • Stir in the cooked chicken, thyme, bay leaf, salt, and pepper.
  3. Cook the Noodles:
    • Add the egg noodles to the pot and reduce the heat to a simmer. Cook according to the package instructions, usually about 6-8 minutes, until the noodles are tender.
  4. Finish and Serve:
    • Remove the bay leaf before serving. Taste and adjust seasoning if needed.
    • Garnish with fresh parsley and serve hot!

This soup is not only comforting but also very customizable. You can add your favorite vegetables or herbs for extra flavor. Enjoy!
