CHOCOLATE PECAN TURTLE CLUSTERS

Here’s a delicious recipe for chocolate pecan turtle clusters!

Ingredients:

  • 1 cup pecan halves
  • 1 cup caramel candies (softened)
  • 2 tablespoons heavy cream (optional, for creamier caramel)
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract (optional)
  • Sea salt (for garnish)

Instructions:

  1. Prepare the Pecan Base:
    • Preheat your oven to 350°F (175°C).
    • Spread the pecan halves on a baking sheet and toast them for about 8-10 minutes until fragrant. Let them cool.
  2. Melt the Caramel:
    • In a small saucepan, combine the caramel candies and heavy cream (if using). Heat over low heat, stirring until melted and smooth.
  3. Assemble the Clusters:
    • Line a baking sheet with parchment paper.
    • Drop a spoonful of toasted pecans onto the parchment, making small clusters.
    • Drizzle or spoon melted caramel over each pecan cluster.
  4. Melt the Chocolate:
    • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring until smooth.
    • Stir in the vanilla extract if desired.
  5. Top with Chocolate:
    • Spoon melted chocolate over the caramel-topped pecan clusters, making sure to cover them well.
  6. Chill and Set:
    • Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate is fully set.
  7. Serve:
    • Once set, remove from the fridge. If desired, sprinkle a little sea salt on top before serving.
