Classic Homemade Sandwich Bread (Soft and Fluffy)

Ingredients:

  • 3 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 2 teaspoons active dry yeast
  • 1 1/4 cups warm water (110°F / 45°C)
  • 1/4 cup milk (whole or 2%)
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon vegetable oil (optional, for added softness)

Instructions:

  1. Activate the Yeast:
    • In a small bowl, combine the warm water, sugar, and yeast. Stir gently to dissolve the sugar and yeast. Let it sit for about 5-10 minutes, until the mixture is frothy and bubbly. This means the yeast is activated and ready to use.
  2. Make the Dough:
    • In a large bowl, combine the flour and salt.
    • Once the yeast mixture is ready, add it to the dry ingredients along with the milk, butter, and vegetable oil (if using).
    • Mix together using a spoon or spatula until a dough forms. The dough will be slightly sticky at first.
  3. Knead the Dough:
    • Turn the dough out onto a floured surface. Knead the dough for about 8-10 minutes, or until it becomes smooth and elastic. If the dough is too sticky, add a small amount of flour, one tablespoon at a time, until the dough is manageable but still soft.
    • Alternatively, you can use a stand mixer with a dough hook attachment to knead the dough for about 5-7 minutes on medium speed.
  4. First Rise:
    • Place the dough in a lightly greased bowl, turning it to coat all sides. Cover with a clean kitchen towel or plastic wrap.
    • Let the dough rise in a warm, draft-free area for about 1-1.5 hours, or until it has doubled in size.
  5. Shape the Loaf:
    • After the dough has risen, gently punch it down to release any air bubbles.
    • Turn the dough out onto a floured surface and shape it into a loaf. To do this, flatten the dough into a rectangle, then fold the edges in toward the center and roll it up tightly from one end to the other.
    • Place the shaped dough into a greased 9×5-inch loaf pan. Pinch the seams to seal the edges.
  6. Second Rise:
    • Cover the loaf pan with a clean towel or plastic wrap. Let the dough rise for another 30-45 minutes, or until it has risen slightly above the rim of the pan.
  7. Bake the Bread:
    • Preheat the oven to 375°F (190°C).
    • Bake the loaf for about 25-30 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.
    • If you have a kitchen thermometer, the internal temperature should reach around 190°F (88°C).
  8. Cool the Bread:
    • Remove the bread from the oven and let it cool in the pan for 5 minutes.
    • Transfer the loaf to a wire rack to cool completely before slicing.

Tips for Soft, Fluffy Bread:

  • Use fresh yeast: Ensure your yeast is fresh and active for the best rise.
  • Knead well: Proper kneading is key to developing the gluten and achieving a fluffy texture.
  • Don’t overbake: Overbaking can lead to a dry loaf, so be sure to check for the golden color and hollow sound when tapping the bread.
