Here’s a delicious recipe for Conchitas con Carne, a flavorful Mexican dish featuring pasta shells stuffed with a savory meat filling!

Conchitas con Carne Recipe

Ingredients:

For the Pasta:

  • 1 pound (450g) conchitas pasta (or any small pasta shell)
  • Salt (for pasta water)

For the Meat Filling:

  • 1 pound (450g) ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-2 jalapeños, finely chopped (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 can (15 oz / 425g) tomato sauce
  • 1 cup (240ml) beef or chicken broth
  • 1 cup (100g) shredded cheese (like cheddar or Monterey Jack)

For Topping:

  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional)
  • Additional cheese for topping (optional)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the conchitas and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Meat Filling:
    • In a large skillet, heat a little oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
    • Add the garlic and jalapeños (if using), cooking for another minute.
    • Add the ground meat, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
    • Stir in the cumin, chili powder, salt, and pepper. Add the tomato sauce and broth, mixing well. Let it simmer for about 10 minutes until slightly thickened.
  3. Assemble the Dish:
    • Preheat your oven to 350°F (175°C).
    • In a baking dish, spread a thin layer of the meat sauce on the bottom.
    • Stuff each cooked conchita with the meat filling and place them in the dish. Pour any remaining sauce over the stuffed shells.
    • Top with shredded cheese.
  4. Bake:
    • Cover the dish with foil and bake for 20 minutes. Then, uncover and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  5. Serve:
    • Garnish with chopped cilantro and serve with sour cream on the side, if desired.
