Corn Fritters

Here’s a tasty recipe for Corn Fritters that are crispy on the outside and tender on the inside!

Corn Fritters

Ingredients:

  • 1 cup corn kernels (fresh, frozen, or canned)
  • ½ cup all-purpose flour
  • 1 large egg
  • ¼ cup milk
  • 2 tablespoons green onion, chopped (optional)
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika or cayenne pepper (optional, for heat)
  • Oil for frying (vegetable or olive oil)

Instructions:

  1. Prepare the Batter:
    • In a large bowl, combine the corn kernels, flour, egg, milk, green onion, baking powder, salt, pepper, and paprika. Mix until just combined; it’s okay if there are some lumps.
  2. Heat the Oil:
    • In a large skillet, heat about ¼ inch of oil over medium heat. You can test if it’s ready by dropping a small amount of batter into the oil; it should sizzle.
  3. Fry the Fritters:
    • Drop spoonfuls of the corn batter into the hot oil, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Work in batches to avoid overcrowding the pan.
  4. Drain:
    • Remove the fritters and place them on a plate lined with paper towels to drain excess oil.
  5. Serve:
    • Enjoy warm, either plain or with your favorite dipping sauce, such as sour cream, ranch, or a spicy aioli.
