Creamy custard puff pastry

Here’s a simple recipe for creamy custard puff pastry:

Ingredients

For the Puff Pastry:

  • 1 package of frozen puff pastry (thawed)

For the Custard:

  • 2 cups milk
  • 1/2 cup granulated sugar
  • 3 large egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the Custard:
    • In a saucepan, heat the milk over medium heat until it’s just about to simmer.
    • In a bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
    • Slowly pour the hot milk into the egg mixture while whisking continuously to temper the eggs.
    • Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened (about 5-7 minutes).
    • Remove from heat and stir in the vanilla extract and butter. Let it cool, then cover with plastic wrap directly on the surface to prevent a skin from forming.
  2. Prepare the Puff Pastry:
    • Preheat the oven to 400°F (200°C).
    • Roll out the thawed puff pastry on a floured surface and cut it into squares or circles.
    • Place the pastry on a baking sheet lined with parchment paper. Use a fork to poke holes in the center of each piece, leaving a border for the crust.
    • Bake for about 15-20 minutes, or until golden brown and puffed. Let cool.
  3. Assemble:
    • Once the pastry and custard are cooled, fill the puff pastry shells with the creamy custard.
    • Optionally, dust with powdered sugar or top with fresh fruit.
