Here’s a simple recipe for crispy and flavorful homemade fried chicken wings:

Ingredients

For the wings:

  • 2 pounds chicken wings
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)

For frying:

  • Vegetable oil (enough for deep frying)

For the sauce (optional):

  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1/4 cup unsalted butter
  • 1 tablespoon honey (optional)
  • 1 tablespoon vinegar (optional)

Instructions

  1. Prep the Wings:
    • Pat the chicken wings dry with paper towels. This helps achieve a crispy texture.
    • In a large bowl, combine the baking powder, salt, pepper, garlic powder, onion powder, paprika, and cayenne. Toss the wings in the mixture until evenly coated.
  2. Chill:
    • For extra crispiness, let the coated wings sit in the fridge for at least 1 hour (or overnight).
  3. Heat the Oil:
    • In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
  4. Fry the Wings:
    • Carefully add the wings in batches to avoid overcrowding. Fry for about 10-12 minutes, turning occasionally, until golden brown and crispy.
    • Use a slotted spoon to remove them and let them drain on paper towels.
  5. Prepare the Sauce (if using):
    • In a small saucepan, melt the butter over medium heat. Stir in the hot sauce, honey, and vinegar until combined. Adjust to taste.
  6. Toss and Serve:
    • If using the sauce, toss the wings in it right before serving. Otherwise, enjoy them plain or with your favorite dipping sauce.

Tips

  • Experiment with different spices and sauces to customize your wings.
  • For extra crispiness, you can double fry the wings: fry them once, let them rest, then fry again for a few minutes.
