Here’s a tasty recipe for Garlic Parmesan Chicken Skewers! These are perfect for grilling or baking and make a delicious appetizer or main dish.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
- Skewers (wooden or metal)
Instructions
- Marinate the Chicken:
- In a large bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix well.
- Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).
- Preheat the Grill or Oven:
- If using a grill, preheat it to medium-high heat. If baking, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Skewers:
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
- Grill or Bake the Skewers:
- Grilling: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Baking: Arrange the skewers on the prepared baking sheet and bake for about 15-20 minutes, or until the chicken is cooked through.
- Add Parmesan:
- In the last few minutes of cooking, sprinkle grated Parmesan cheese over the skewers. If grilling, close the lid to allow the cheese to melt. If baking, you can switch to broil for a minute or two to get the cheese bubbly and golden.
- Serve:
- Remove the skewers from the grill or oven and let them rest for a few minutes. Garnish with chopped fresh parsley before serving.
Enjoy!
