Ingredients:

For the Sandwich:

  • 4 slices of thick-cut bread (such as sourdough or Texas toast)
  • 2 cups cooked brisket (sliced thinly)
  • 1 large onion, thinly sliced
  • 2 tablespoons butter (for caramelizing onions and grilling the bread)
  • 2 tablespoons olive oil (for caramelizing onions)
  • 1 cup shredded cheese (such as Swiss, cheddar, or provolone)
  • 2 teaspoons Dijon mustard or horseradish sauce (optional, for extra flavor)
  • Salt and pepper, to taste

For Caramelizing the Onions:

  1. Caramelize the Onions:
    • Heat a tablespoon of butter and the olive oil in a large skillet over medium heat. Add the thinly sliced onions and a pinch of salt.
    • Cook the onions, stirring occasionally, for about 20-30 minutes. If the onions start to brown too quickly, reduce the heat slightly. Stir frequently to prevent burning. The goal is to have the onions soften and develop a deep golden-brown color.
    • Once caramelized, remove the onions from the skillet and set aside.

Assembling the Sandwich:

  1. Prepare the Bread:
    • Spread a thin layer of butter on one side of each slice of bread. This will be the side that gets grilled.
  2. Layer the Sandwich:
    • On the unbuttered side of one slice of bread, spread a thin layer of Dijon mustard or horseradish sauce (if desired).
    • Add a generous amount of sliced brisket on top of the mustard, followed by a handful of caramelized onions.
    • Sprinkle a good amount of shredded cheese on top of the onions.
    • Top with another slice of bread, buttered side facing out.
  3. Grill the Sandwich:
