Here’s a hearty recipe for a Layered Beef and Mashed Potato Casserole that’s perfect for a comforting meal!

Layered Beef and Mashed Potato Casserole

Ingredients:

For the Beef Layer:

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Mashed Potato Layer:

  • 2 lbs (900g) potatoes, peeled and cubed
  • ½ cup milk (more if needed)
  • ¼ cup butter
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Beef:
    • In a large skillet, cook the diced onion and garlic over medium heat until softened.
    • Add the ground beef and cook until browned. Drain excess fat.
    • Stir in the mixed vegetables, tomato sauce, Worcestershire sauce, oregano, salt, and pepper. Let it simmer for about 5-7 minutes. Remove from heat.
  3. Prepare the Mashed Potatoes:
    • Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
    • Add milk, butter, salt, and pepper. Mash until smooth and creamy. If using, stir in half of the shredded cheese.
  4. Assemble the Casserole:
    • In a greased 9×13-inch baking dish, spread the beef mixture evenly on the bottom.
    • Top with the mashed potatoes, spreading them out evenly.
    • If desired, sprinkle the remaining shredded cheese on top.
  5. Bake: Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.
  6. Serve: Let it cool for a few minutes before serving. Enjoy!
