Here’s a delightful recipe for Monkey Butter, a sweet and fruity spread that’s perfect for toast, pancakes, or just eating by the spoonful!

Monkey Butter

Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup shredded coconut (unsweetened or sweetened, depending on your preference)
  • 1 cup chopped pecans (or walnuts)
  • 1/2 cup sugar (adjust to taste)
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon (optional)

Instructions:

  1. Combine Ingredients:
    • In a medium saucepan, mix together the mashed bananas, shredded coconut, chopped pecans, sugar, vanilla extract, lemon juice, and cinnamon (if using).
  2. Cook the Mixture:
    • Cook the mixture over medium heat, stirring frequently. Bring it to a gentle boil, then reduce the heat to low and simmer for about 10-15 minutes, or until it thickens to your desired consistency.
  3. Cool and Store:
    • Once thickened, remove from heat and let it cool. Transfer the Monkey Butter to a jar or airtight container.
  4. Refrigerate:
    • Store in the refrigerator for up to two weeks.

Tips:

  • Feel free to customize by adding chocolate chips, dried fruits, or spices like nutmeg.
  • Serve on toast, pancakes, or as a filling for pastries!
