Ingredients:

For the Peach Filling:

  • 6 cups fresh or frozen peaches (about 4-5 large peaches), peeled and sliced
  • 1/2 cup granulated sugar (adjust to taste depending on the sweetness of the peaches)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)

For the Cobbler Topping:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1/2 cup milk (whole milk or buttermilk works well)
  • 1 teaspoon vanilla extract

For Serving:

  • Vanilla ice cream or whipped cream (optional)

Instructions:

Step 1: Prepare the Peach Filling

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare Peaches:
    • If using fresh peaches, peel and slice them. If using frozen, allow them to thaw and drain any excess liquid.
  3. Make the Filling:
    • In a large bowl, toss the peaches with the sugar, lemon juice, cornstarch (if using), cinnamon, and nutmeg. Stir until the peaches are evenly coated. The cornstarch helps to thicken the juices from the peaches while baking.
  4. Transfer to Baking Dish:
    • Pour the peach mixture into a 9×13-inch baking dish or an 8×8-inch square dish, spreading it out evenly.

Step 2: Make the Cobbler Topping

  1. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut in the Butter:
    • Add the cold, cubed butter to the dry ingredients. Use a pastry cutter, fork, or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  3. Add Wet Ingredients:
    • Pour in the milk and vanilla extract, stirring just until the dough comes together. The mixture will be thick and biscuit-like.

Step 3: Assemble the Cobbler

  1. Add the Topping:
    • Drop spoonfuls of the cobbler dough evenly over the peach filling. It’s okay if some of the peaches are exposed, as the topping will spread out slightly as it bakes.

Step 4: Bake the Cobbler

  1. Bake:
    • Place the baking dish in the oven and bake for 40-45 minutes, or until the topping is golden brown and a toothpick inserted into the biscuit topping comes out clean.
  2. Check the Filling:
    • The peach filling should be bubbling around the edges, and the topping should be firm and golden.
