Silver’s Batter Recipe

Here’s a simple recipe for silver batter, which is a light and crispy batter that works well for frying fish, vegetables, or other foods. It creates a delicate golden crust, perfect for deep frying.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper (optional)
  • 1 cup cold sparkling water or cold soda water (adjust as needed)
  • 1 tablespoon vegetable oil (optional, for extra crispiness)

Instructions:

  1. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and pepper (if using).
  2. Add Liquid:
    • Slowly add the cold sparkling water to the dry ingredients, stirring gently. The carbonation from the sparkling water helps create a light, crispy texture.
    • Stir until just combined. The batter should be thick but pourable. If it’s too thick, add a little more sparkling water to reach the desired consistency.
  3. Heat the Oil:
    • Heat oil in a deep fryer or large pan to about 350°F (175°C). You can test the oil by dropping a small amount of batter into the hot oil. It should sizzle and float to the top immediately.
  4. Coat the Food:
    • Dip your chosen food (fish fillets, vegetables, or other items) into the batter, ensuring it is fully coated.
  5. Fry the Food:
    • Carefully place the battered food into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-5 minutes or until golden brown and crispy.
  6. Drain and Serve:
    • Remove the fried items from the oil and place them on a paper towel-lined plate to drain excess oil.
    • Serve immediately with your favorite dipping sauce or enjoy as is.

Tips:

  • Cold sparkling water is key to making the batter light and crispy. The colder, the better!
  • You can adjust the seasoning in the batter to suit your taste, adding garlic powder, paprika, or herbs for extra flavor.
