Here’s a delicious recipe for Succulent Garlic Butter Lobster & Scallops with Herbs. This dish is full of flavor, perfect for a special occasion or a fancy dinner at home. The garlic butter, combined with fresh herbs, enhances the natural sweetness of the lobster and scallops.

Ingredients:

  • 2 lobster tails (fresh or thawed if frozen)
  • 1 lb sea scallops (about 12 large)
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (plus extra for garnish)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon fresh basil, chopped (optional)
  • 1 teaspoon lemon zest (optional, for extra freshness)
  • 1 tablespoon freshly squeezed lemon juice (for serving)
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

1. Prepare the Lobster Tails:

  • If using frozen lobster tails, thaw them in the refrigerator overnight.
  • Using kitchen scissors or a sharp knife, cut the lobster tails lengthwise down the middle to expose the meat. Gently pull the meat up, leaving it attached at the base of the tail shell.
  • Season the lobster meat with salt, pepper, and a little lemon zest (optional).

2. Prepare the Scallops:

  • Pat the scallops dry with paper towels to remove excess moisture. This will help them sear better.
  • Season with salt and pepper.

3. Cook the Lobster Tails:

  • Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the lobster tails to the pan, meat side down, and cook for about 3-4 minutes until the meat is golden brown.
  • Flip the lobster tails over and cook for an additional 3-4 minutes, or until the meat is opaque and cooked through.
  • Remove the lobster tails from the skillet and set them aside.

4. Cook the Scallops:

  • In the same skillet, add 1 tablespoon of butter and a little more olive oil, if needed.
  • Add the scallops to the skillet in a single layer and sear for 2-3 minutes per side until they develop a golden crust and are opaque in the center. Be sure not to overcrowd the pan, as this will prevent a good sear.
  • Remove the scallops from the skillet and set them aside.

5. Make the Garlic Butter Sauce:

  • In the same skillet, melt the remaining 1 tablespoon of butter over medium heat.
  • Add the minced garlic and cook for about 30 seconds, or until fragrant.
  • Stir in the fresh parsley, thyme, and basil (if using). Cook for an additional minute.
  • Add the lemon juice and a pinch of salt and pepper to taste. Stir to combine.

6. Combine and Serve:

  • Return the cooked lobster tails and scallops to the skillet, spooning the garlic butter sauce over the top.
  • Let everything warm through for a minute, then remove from heat.
  • Serve the lobster and scallops on a platter, garnished with extra chopped parsley and lemon wedges.

Tips:

  • If you prefer, you can also broil the lobster tails instead of pan-searing them. Brush the lobster meat with melted butter, season, and broil for 5-7 minutes.
  • For added richness, you can mix in a splash of white wine or a little cream to the garlic butter sauce.
