Here’s a delightful recipe for Upside-Down Pecan Cake that’s sure to impress!

Ingredients

For the Topping:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup pecans, halved
  • 1/2 teaspoon cinnamon

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Topping:
    • Preheat your oven to 350°F (175°C).
    • In a saucepan, melt the butter over medium heat. Stir in the brown sugar and cinnamon until combined.
    • Pour this mixture into a greased 9-inch round cake pan. Arrange the pecans evenly over the butter-sugar mixture.
  2. Make the Cake Batter:
    • In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
    • In another bowl, combine the softened butter, milk, eggs, and vanilla extract. Mix until smooth.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  3. Assemble and Bake:
    • Pour the cake batter over the pecans in the pan, spreading it evenly.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool and Serve:
    • Allow the cake to cool in the pan for about 10 minutes. Then, carefully invert the cake onto a serving plate.
    • Let it cool slightly before slicing and serving. Enjoy it warm or at room temperature!
