Here’s a simple recipe for vegetable beef soup:
Ingredients:
- 1 lb beef (chuck or stew meat), cut into cubes
- 1 onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup green beans, chopped
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
- Brown the Beef: In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides. Remove and set aside.
