vegetable beef soup

Here’s a simple recipe for vegetable beef soup:

Ingredients:

  • 1 lb beef stew meat, cut into small pieces
  • 4 cups beef broth
  • 2 cups water
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 potatoes, diced
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: 1 cup green beans, chopped

Instructions:

  1. Brown the Beef: In a large pot, heat olive oil over medium-high heat. Add the beef and brown on all sides. Remove and set aside.
  2. Sauté Vegetables: In the same pot, add onion, carrots, and celery. Sauté until softened, about 5 minutes. Add garlic and cook for another minute.
  3. Combine Ingredients: Return the beef to the pot. Add broth, water, potatoes, diced tomatoes, thyme, oregano, salt, and pepper. Stir well.
  4. Simmer: Bring to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beef is tender.
  5. Add Green Beans: If using, stir in green beans during the last 15 minutes of cooking.
  6. Adjust Seasoning: Taste and adjust seasoning as needed.
  7. Serve: Enjoy hot, with crusty bread if desired!
