Ingredients:
- 1 lb beef stew meat, cut into small pieces
- 4 cups beef broth
- 2 cups water
- 1 onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 potatoes, diced
- 1 can (14.5 oz) diced tomatoes (with juice)
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Optional: 1 cup green beans, chopped
Instructions:
- Brown the Beef: In a large pot, heat olive oil over medium-high heat. Add the beef and brown on all sides. Remove and set aside.
