Here’s a simple and hearty Vegetable Soup recipe that’s perfect for any time!

Hearty Vegetable Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced (any color)
  • 1 cup green beans, cut into pieces
  • 1 can (14 oz) diced tomatoes (with juices)
  • 4 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are tender.
    • Add the garlic and cook for an additional minute.
  2. Add Remaining Vegetables:
    • Stir in the zucchini, bell pepper, green beans, and diced tomatoes. Mix well.
  3. Add Broth and Seasonings:
    • Pour in the vegetable broth and add the thyme, basil, bay leaf, salt, and pepper. Bring to a boil.
  4. Simmer:
    • Reduce heat and let the soup simmer for about 20-25 minutes, until the vegetables are tender. If using, add the frozen peas in the last 5 minutes of cooking.
  5. Finish and Serve:
    • Remove the bay leaf before serving. Taste and adjust seasoning if needed. Garnish with fresh parsley.

This vegetable soup is versatile, so feel free to add or substitute your favorite vegetables. Enjoy!
