Here’s a simple and tasty recipe for roasted cauliflower and broccoli:

Roasted Cauliflower and Broccoli

Ingredients:

  • 1 head of cauliflower, cut into florets
  • 1 head of broccoli, cut into florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika or your favorite spice (optional)
  • Juice of half a lemon
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Vegetables: In a large bowl, combine the cauliflower and broccoli florets.
  3. Season: Drizzle the olive oil over the vegetables. Add the minced garlic, salt, pepper, and paprika (if using). Toss everything together until the vegetables are well coated.
  4. Roast: Spread the mixture evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until the veggies are tender and golden brown, stirring halfway through.
  5. Finish: Once roasted, remove from the oven and drizzle with lemon juice. If you like, sprinkle with grated Parmesan cheese.
  6. Serve: Enjoy as a side dish or toss it into salads or grain bowls!
