Here’s a delicious recipe for Creamy Seafood Chowder that’s rich and satisfying!

Creamy Seafood Chowder

Ingredients:

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 medium potatoes, diced
  • 4 cups seafood stock (or chicken broth)
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup corn (fresh or frozen)
  • 1 lb (450g) mixed seafood (such as shrimp, scallops, and white fish)
  • 1 teaspoon dried thyme
  • 1 teaspoon Old Bay seasoning (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the Vegetables:
    • In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened.
  2. Add Garlic and Potatoes:
    • Stir in the minced garlic and cook for another minute. Add the diced potatoes and cook for a few minutes, stirring occasionally.
  3. Add Stock and Simmer:
    • Pour in the seafood stock and bring to a boil. Reduce the heat and let it simmer until the potatoes are tender, about 10-15 minutes.
  4. Incorporate Cream and Corn:
    • Stir in the heavy cream, milk, and corn. Cook for an additional 5 minutes.
  5. Add Seafood:
    • Gently add the mixed seafood to the pot. Cook for about 5-7 minutes, or until the seafood is cooked through and opaque.
  6. Season and Serve:
    • Stir in the thyme, Old Bay seasoning (if using), salt, and pepper. Adjust seasoning to taste.
    • Serve hot, garnished with fresh parsley.
