ONE-POT Creamy Sausage Tortellini Soup with Spinach and Sweet Potatoes

Here’s a delicious recipe for One-Pot Creamy Sausage Tortellini Soup with Spinach and Sweet Potatoes:

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (casings removed)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes (with juices)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 9 oz cheese tortellini (fresh or frozen)
  • 4 cups fresh spinach
  • 1 cup heavy cream (or half-and-half)
  • Grated Parmesan cheese (for serving)

Instructions

  1. Cook the sausage: In a large pot, heat olive oil over medium heat. Add the sausage, breaking it apart with a spoon, and cook until browned.
  2. Add vegetables: Stir in the onion and garlic, cooking until the onion is translucent. Then add the sweet potatoes and cook for another 2-3 minutes.
  3. Add liquids and seasonings: Pour in the chicken broth and diced tomatoes. Stir in the Italian seasoning, salt, and pepper. Bring to a simmer and cook until sweet potatoes are tender (about 10-15 minutes).
  4. Add tortellini: Stir in the tortellini and cook according to package instructions (usually about 3-5 minutes).
  5. Finish the soup: Once the tortellini is cooked, stir in the spinach and heavy cream. Cook until the spinach is wilted and everything is heated through.
  6. Serve: Ladle the soup into bowls and top with grated Parmesan cheese.
