Here’s a delicious recipe for creamy shrimp fettuccine with homemade Alfredo sauce. It’s rich, flavorful, and perfect for a cozy dinner!

Creamy Shrimp Fettuccine with Homemade Alfredo Sauce

Ingredients:

For the Pasta:

  • 8 oz fettuccine pasta
  • Salt (for pasta water)

For the Shrimp:

  • 1 lb shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1/2 teaspoon red pepper flakes (optional)

For the Alfredo Sauce:

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Pasta:
    • In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
  2. Cook the Shrimp:
    • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds.
    • Add the shrimp to the skillet, seasoning with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side, until the shrimp are pink and opaque. Remove from the skillet and set aside.
  3. Make the Alfredo Sauce:
    • In the same skillet, melt the butter over medium heat. Once melted, add the heavy cream and garlic powder. Stir to combine.
    • Gradually whisk in the Parmesan cheese until smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
    • Season with salt and pepper to taste.
  4. Combine Everything:
    • Add the cooked fettuccine and shrimp to the Alfredo sauce, tossing to coat evenly. If needed, add more reserved pasta water to loosen the sauce.
  5. Serve:
    • Garnish with chopped parsley and extra Parmesan if desired. Enjoy your creamy shrimp fettuccine!

Tips:

  • For added flavor, you can include steamed broccoli or spinach.
  • If you prefer a lighter version, you can substitute half-and-half for the heavy cream.
