Air fryer Cornish Pasties

Here’s a simple recipe for making Cornish pasties in an air fryer:

Ingredients

For the pastry:

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 4-5 tbsp cold water

For the filling:

  • 1 medium potato, diced
  • 1/2 cup diced beef (or a mix of vegetables for a vegetarian option)
  • 1 small onion, finely chopped
  • 1/2 cup turnip or rutabaga, diced
  • Salt and pepper to taste
  • Optional: herbs (like thyme) for flavor

Instructions

  1. Make the pastry:
    • In a bowl, combine flour and salt.
    • Add the cold butter and mix until crumbly.
    • Gradually add cold water, mixing until the dough comes together.
    • Wrap in plastic and refrigerate for at least 30 minutes.
  2. Prepare the filling:
    • In a bowl, combine the diced potato, beef, onion, turnip, salt, and pepper. Mix well.
  3. Assemble the pasties:
    • Preheat the air fryer to 350°F (175°C).
    • Roll out the pastry on a floured surface to about 1/8 inch thick.
    • Cut out circles (about 6-8 inches in diameter).
    • Place a spoonful of filling on one half of each circle.
    • Fold over the pastry, sealing the edges by crimping with a fork.
  4. Air fry the pasties:
    • Lightly brush the tops with egg wash (optional).
    • Place pasties in the air fryer basket, ensuring they’re not overcrowded.
    • Cook at 350°F (175°C) for 20-25 minutes, or until golden brown and cooked through.
  5. Serve:
    • Let them cool slightly before serving. Enjoy with your favorite dipping sauce or salad.
