Coconut Cream Dream Cake is a delicious, rich dessert with layers of moist coconut-flavored cake, creamy coconut filling, and a generous topping of whipped cream and toasted coconut. It’s perfect for coconut lovers!

Here’s a simple recipe to make Coconut Cream Dream Cake:

Ingredients:

For the Cake:

  • 1 box of yellow cake mix (or make from scratch if preferred)
  • 1 cup coconut milk (instead of water for a coconut flavor)
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup shredded sweetened coconut

For the Coconut Filling:

  • 1 (5.1 oz) box of instant coconut pudding mix (or vanilla, if you prefer)
  • 1 1/2 cups cold milk
  • 1/2 cup shredded coconut

For the Topping:

  • 1 (8 oz) tub of whipped topping (or homemade whipped cream)
  • 1/2 cup toasted coconut flakes (for garnish)

Instructions:

  1. Make the cake:
    • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large bowl, mix the cake mix with coconut milk, oil, eggs, and vanilla extract. Beat according to the package instructions.
    • Stir in the shredded coconut.
    • Divide the batter evenly between the two prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  2. Prepare the coconut filling:
    • In a medium bowl, whisk together the coconut pudding mix and cold milk. Stir in the shredded coconut. Let the pudding sit for about 5 minutes to thicken.
  3. Assemble the cake:
    • Once the cakes are fully cooled, place one layer on a serving platter. Spread the coconut filling evenly over the top of the first layer.
    • Place the second cake layer on top of the filling.
  4. Add the topping:
    • Spread the whipped topping evenly over the entire cake.
    • Toast the coconut flakes by placing them in a dry skillet over medium heat. Stir constantly for 2-3 minutes until golden brown. Let them cool slightly, then sprinkle over the top of the cake.
  5. Chill and serve:
    • Refrigerate the cake for at least 1-2 hours before serving to allow the filling to set and the flavors to meld together.
    • Slice and enjoy the creamy, coconut-filled goodness!
