Cream Cheese and Bacon Stuffed Doritos Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 oz cream cheese, softened
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed Doritos (Nacho Cheese or Cool Ranch)
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or olive oil.
  2. Prepare the Filling:
    • In a mixing bowl, combine the softened cream cheese, crumbled bacon, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Stuff the Chicken:
    • Take each chicken breast and make a pocket by slicing it horizontally, being careful not to cut all the way through.
    • Stuff each chicken breast with the cream cheese and bacon mixture. Use toothpicks to secure the opening if needed.
  4. Coat the Chicken:
    • In a shallow dish, place the crushed Doritos. Dip each stuffed chicken breast in olive oil, then coat with the crushed Doritos, pressing gently to adhere.
  5. Bake:
    • Place the coated chicken breasts in the prepared baking dish. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  6. Serve:
