Here’s a comforting recipe for Creamy Lasagna Soup that’s full of flavor and easy to make!

Creamy Lasagna Soup

Ingredients:

  • For the soup:
    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 3 cloves garlic, minced
    • 1 pound ground beef (or Italian sausage)
    • 1 can (28 ounces) crushed tomatoes
    • 4 cups chicken or vegetable broth
    • 2 teaspoons dried basil
    • 1 teaspoon dried oregano
    • Salt and pepper, to taste
    • 8 ounces lasagna noodles, broken into pieces
    • 1 cup ricotta cheese
    • 1 cup heavy cream (or half-and-half)
    • 1 cup shredded mozzarella cheese (plus extra for topping)
    • Fresh parsley or basil, for garnish

Instructions:

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute.
  2. Brown the Meat: Add the ground beef (or sausage) to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
  3. Add Tomatoes and Broth: Stir in the crushed tomatoes, broth, dried basil, oregano, salt, and pepper. Bring to a simmer.
  4. Cook the Noodles: Add the broken lasagna noodles to the pot and cook for about 10-12 minutes, or until the noodles are tender.
  5. Make It Creamy: Once the noodles are cooked, reduce the heat to low. Stir in the ricotta cheese and heavy cream, mixing until well combined. Add the shredded mozzarella and stir until melted.
  6. Serve: Ladle the soup into bowls and top with extra mozzarella and fresh parsley or basil.
