CREAMY POTATO BACON SOUP

Here’s a delicious recipe for creamy potato bacon soup:

Ingredients

  • 4 large potatoes, peeled and diced
  • 6 slices of bacon, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme (optional)
  • Chopped green onions or chives for garnish

Instructions

  1. Cook the Bacon: In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving some fat in the pot.
  2. Sauté Onions and Garlic: In the same pot, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute.
  3. Add Potatoes and Broth: Stir in the diced potatoes and pour in the broth. Bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
  4. Blend the Soup: Use an immersion blender to puree the soup to your desired consistency (or carefully transfer to a blender in batches).
  5. Add Cream and Season: Stir in the heavy cream, and season with salt, pepper, and thyme. Heat through.
  6. Serve: Ladle the soup into bowls, top with crispy bacon, and garnish with green onions or chives.
