Here’s a classic recipe for French Onion Soup that’s rich, flavorful, and topped with gooey cheese!

French Onion Soup Recipe

Ingredients:

  • 4 large onions, thinly sliced (yellow or sweet onions work well)
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar (optional, to help with caramelization)
  • 2 cloves garlic, minced
  • 8 cups (2 liters) beef broth (or a mix of beef and chicken broth)
  • 1 cup (240ml) dry white wine (optional)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper, to taste
  • Baguette, sliced
  • 2 cups (200g) grated Gruyère cheese (or a mix of Gruyère and Parmesan)

Instructions:

  1. Caramelize the Onions:
    • In a large pot or Dutch oven, melt the butter and olive oil over medium heat. Add the sliced onions and stir to coat.
    • Cook for about 30-40 minutes, stirring frequently, until the onions are caramelized and golden brown. If desired, sprinkle in the sugar to enhance caramelization.
  2. Add Garlic and Wine:
    • Stir in the minced garlic and cook for an additional minute.
    • If using, pour in the white wine and deglaze the pot, scraping up any browned bits. Let it simmer for about 5 minutes.
  3. Add Broth and Herbs:
    • Pour in the beef broth and add the thyme. Season with salt and pepper to taste.
    • Bring the soup to a gentle simmer and let it cook for about 20-30 minutes to develop the flavors.
  4. Prepare the Bread:
    • While the soup simmers, preheat your oven broiler.
    • Place the baguette slices on a baking sheet and toast them under the broiler until golden brown on both sides.
  5. Assemble and Broil:
    • Ladle the hot soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl, then sprinkle generously with the grated cheese.
    • Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Watch closely to prevent burning!
  6. Serve:
    • Carefully remove the bowls from the oven (they will be hot!). Let them cool for a minute, then serve immediately.
