Here’s a delicious recipe for Peanut Butter Chocolate Rice Krispie Treat Cups:

Ingredients

  • For the Rice Krispie Treats:
    • 3 cups Rice Krispies cereal
    • 4 tablespoons butter
    • 10 oz mini marshmallows
    • 1/2 cup creamy peanut butter
  • For the Chocolate Topping:
    • 1 cup semi-sweet chocolate chips
    • 2 tablespoons vegetable oil (optional, for smoother chocolate)

Instructions

  1. Prepare the Cups:
    • Line a muffin tin with paper liners or grease it lightly with cooking spray.
  2. Make the Rice Krispie Treats:
    • In a large saucepan, melt the butter over low heat.
    • Add the mini marshmallows and stir until completely melted.
    • Remove from heat and stir in the peanut butter until well combined.
    • Gently fold in the Rice Krispies until they are evenly coated.
  3. Form the Cups:
    • Using a spoon, press the Rice Krispie mixture into the lined muffin cups, creating a well in the center to hold the chocolate later. Make sure to pack it tightly.
  4. Let it Set:
    • Allow the Rice Krispie cups to cool and set for about 30 minutes at room temperature or in the fridge.
  5. Prepare the Chocolate Topping:
    • In a microwave-safe bowl, combine the chocolate chips and vegetable oil (if using).
    • Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  6. Assemble the Cups:
    • Spoon the melted chocolate into the center of each Rice Krispie cup, filling it to the top.
  7. Chill:
    • Place the muffin tin in the refrigerator for about 30 minutes, or until the chocolate is set.
  8. Serve:
    • Once set, remove the cups from the muffin tin and enjoy!

Tips

  • For added texture, you can sprinkle chopped peanuts or a drizzle of additional peanut butter on top of the chocolate.
  • These treats can be stored in an airtight container for a few days.
