Pecan Pie Bars

Here’s a tasty recipe for Pecan Pie Bars that captures the deliciousness of traditional pecan pie in a convenient bar form!

Ingredients

For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the Filling:

  • 1 cup light corn syrup
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves (or chopped pecans)

Instructions

1. Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.

2. Make the Crust

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Gradually add the flour and salt, mixing until just combined.
  • Press the mixture evenly into the bottom of the prepared baking pan.

3. Bake the Crust

  • Bake the crust in the preheated oven for about 15-20 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

4. Prepare the Filling

  • In a large mixing bowl, whisk together the corn syrup, brown sugar, eggs, vanilla extract, and salt until smooth.
  • Stir in the pecans until evenly distributed.

5. Assemble and Bake

  • Pour the pecan filling over the warm crust, spreading it evenly.
  • Bake for an additional 25-30 minutes, or until the filling is set and slightly bubbly.

6. Cool and Cut

  • Allow the bars to cool in the pan on a wire rack. Once completely cooled, lift them out using the parchment paper (if used) and cut into squares or bars.

Tips

  • For an extra touch, sprinkle a little sea salt on top of the bars before baking.
  • Serve with whipped cream or vanilla ice cream for a delightful dessert.
