Hereโ€™s a simple and delicious recipe for a hearty pot soup thatโ€™s perfect for any occasion!

Hearty Pot Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cups potatoes, diced
  • 1 can (14 oz) diced tomatoes (with juices)
  • 1 cup green beans, chopped (fresh or frozen)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • Fresh parsley or herbs for garnish (optional)

Instructions:

  1. Sautรฉ Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sautรฉ for about 5-7 minutes, until the vegetables start to soften.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Add Broth and Potatoes:
    • Pour in the broth and add the diced potatoes. Bring to a boil.
  3. Add Remaining Ingredients:
    • Stir in the diced tomatoes, green beans, thyme, basil, bay leaf, salt, and pepper. Reduce the heat to a simmer.
  4. Simmer:
    • Let the soup simmer for about 20-25 minutes, or until the potatoes and green beans are tender. If using, add the frozen peas in the last 5 minutes of cooking.
  5. Finish and Serve:
    • Remove the bay leaf before serving. Taste and adjust the seasoning if needed. Garnish with fresh parsley or herbs.
