Smothered Chicken with Mushrooms
Ingredients:
- For the chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- For the mushroom sauce:
- 1 medium onion, sliced
- 8 ounces mushrooms, sliced (cremini or button)
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Season the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
- Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add the sliced onion and mushrooms. Cook for about 5-7 minutes until they are softened and slightly caramelized. Add the minced garlic and sauté for another minute.
- Make the Sauce: Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Stir in the heavy cream, thyme, Worcestershire sauce, and season with salt and pepper. Bring to a simmer and cook for about 3-5 minutes, allowing the sauce to thicken slightly.
- Combine: Return the seared chicken to the skillet, spooning the mushroom sauce over the top. Cover and cook for an additional 5 minutes to heat the chicken through and allow the flavors to meld.
- Serve: Garnish with fresh parsley before serving. Enjoy with rice, mashed potatoes, or your favorite side!
Enjoy!
